Your day to day

We believe every plate tells a story. InterContinental Rome Ambasciatori Palace is looking for an experienced Executive Chef, with a palate for serving up a truly memorable Dining Experience and all aspects of food preparations for our Outlets. Delivery quality and high standard are also part of your soul.

A little taste of your day-to-day

Every day is different, but you’ll mostly be:

  • Manage day-to-day staffing needs, plan and assign work. Mentoring, coaching and regular performance appraisal, providing feedback to improve productivity and team member performance 
  • Ensure staff is properly trained and has the tools and equipment to carry out their job 
  • Ensuring that your team delivers great food quality 
  • Planning of new dishes and products research, menu costing and write recipes
  • Ensure that outstanding culinary technical skills are maintained
  • Assist with organizing special events and special food promotions
  • Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations where needed
  • Conduct routine inspections of the department and take immediate action to correct any deficiencies 
  • Coordinate daily Front of the House and Back of the House kitchen operations
  • Deliver Luxury service and maximize customer satisfaction with emotions
  • Ensure compliance with sanitation and safety regulations and guarantee high-profile hygienic standards. Implement and follow regulations regarding health and safety, HACCP, hotel standards, policies and procedures
  • Control operational costs and identify measures to cut waste
  • Read and explain to staff detailed reports on a weekly, monthly and yearly basis
  • Promote the brand in the local community through word-of-mouth and restaurant events
  • Control product consistency that meets expectations
  • Staying one step ahead of our guests’ needs and adapting food ingredients following food intolerance and allergies and open to offer tailored menus
  • Prepares, cooks, serves and stores all the food items produced, following FIFO principle
  • Observe and maintain the daily condition of all physical facilities, equipment, kitchen areas and make recommendations for corrections and improvement as needed
  • Dealing with a Brand Restaurant company
  • Reporting to the DOO

What we need from you

  • Advance knowledge of food preparation and new way of cooking
  • Experience of 3 years or more within Kitchen department with similar role in a luxury hotel or Fine Dining Restaurant
  • Able to work under pressure
  • Friendly and positive with a flexible approach and confidence to guide the Kitchen staff
  • Good communication skills and genuine approach with all staff members
  • Good problem-solving skills that will turn issues into opportunities, so every guest leaves with great memories
  • Fluent in Italian & English language - extra language skills would be great, but not essential
  • Creation of SOP’s & Standards
  • Strong leadership, motivational and people skills
  • Emotional intelligence skills
  • Passion for the hospitality field and excellence in luxury service
  • Flexibility
  • Dedication to creating memorable experiences for our guests
  • Good financial management skills
