Your day to day
· Assist in Kitchen Management: Collaborate with the Executive Chef in overseeing all aspects of the kitchen operation, including food production, staff management, inventory control, and kitchen hygiene.
· Food Preparation: Supervise and participate in the preparation and cooking of dishes according to established recipes and quality standards, ensuring consistency in taste and presentation in both La Rive and La Brasserie
· Staff Supervision: Train, mentor, and supervise kitchen staff, ensuring that they follow proper cooking techniques, adhere to safety and hygiene guidelines, and maintain a high level of professionalism.
· Menu Development: Collaborate with the Executive Chef to create and update menus, incorporating seasonal ingredients and innovative culinary concepts while maintaining the restaurant's culinary identity.
· Quality Control: Conduct regular quality checks to ensure that all dishes leaving the kitchen meet the restaurant's standards for taste, presentation, and portion size.
· Inventory Management: Assist in monitoring and maintaining proper inventory levels of food and supplies, as well as ensuring proper storage and rotation of ingredients.
· Kitchen Organization: Maintain a clean, organized, and efficient kitchen environment, including proper equipment maintenance and sanitation practices.
· Cost Control: Work with the Executive Chef to manage food costs by minimizing waste, controlling portion sizes, and ensuring efficient use of ingredients.
· Adherence to Health and Safety Regulations: Ensure that all kitchen staff comply with food safety and health regulations and take appropriate measures to maintain a safe and clean work environment.
· Collaboration: Collaborate with other departments, such as front-of-house staff, to ensure smooth service and address customer feedback and special requests.
