As Executive Sous Chef you are responsible for all aspects of food preparation and food areas and to oversee the daily operations of all kitchen areas, as well as controlling of all costs but not limited to take active part in the actual food preparation and to ensure that products are consistently prepared according to the highest possible standards, assist Executive Chef to manage all the kitchen staff and to ensure that kitchen equipment is maintained properly, that the highest standards of cleanliness are kept and that safe food handling is practiced at all times, establish regular work schedules, section plans and rotations for all kitchen areas, ensure that high standard service is provided at all times and to deal with guests complaints and comments in an efficient and timely manner.
A little taste of your day-to-day:
- To ensure a smooth and efficient service during meal hours
- To take active part in the actual food preparation,
- To ensure that products are consistently prepared according to the highest possible standards
- To ensure that kitchen personnel comply with the latest Health and Sanitation regulations at all times and to assist oversee the cleaning procedure for food handlers in the kitchen
- To report any maintenance issues in the kitchen in a timely manner and to ensure that the work orders are followed up on accordingly
- To monitor and control the inventory of the kitchen
- To adhere to, and to ensure that the kitchen staff adheres to all company policies and procedures, manuals and directives
- To keep leftover food to a minimum
- To monitor and control the use of consumables in the kitchen
- To ensure that company property is maintained properly and treated with respect at all times
- To ensure that the proper use of personal protective equipment in the hot kitchen is implemented at all times
- To ensure that safe lifting techniques are practiced at all times in the hot kitchen
- To schedule and conduct meetings with the kitchen staff on a daily basis
- To conduct meetings with cooks on a daily basis
- To communicate with the Executive Chef on a regular basis
- To encourage and demonstrate good communication, excellent teamwork and continuous training, coaching and counseling
- Wears uniform with pride and honor
- Any other duties as assigned by the management
What We need from you:
- Bachelor’s degree or equivalent certificate in culinary arts
- 5+ years’ experience as a chef and at least 2 years of experience in a similar leadership role in any hotel properties
- Must be Intermediate in MS office Packages
- Must be fluent and written and spoken English
- Must speak local language(s)
