Cost Controller

 

Every day is different, but you’ll mostly be:

 

  • Implement necessary procedures for cost control.
  • Calculate F&B cost ratios and propose corrective actions.
  • Manage the creation, updating, or deletion of items in the stock management software.
  • Update supplier prices in the database.
  • Assist all internal hotel stakeholders in defining and validating purchasing needs.
  • Ensure competitive intelligence and regular benchmarking of suppliers and products/services in partnership with the Group Purchasing Department.
  • Ensure that duty meal checks and F&B entertainment checks are processed in line with established procedures, preparing a daily entertainment report in the Income Auditor's absence.
  • Calculate the cost of all recipes, inter-kitchen transfers, and food and beverage consumed by hotel employees.
  • Oversee updates to F&B menu items in the POS system, maintaining independent control of restaurant and bar menus.
  • Establish and enforce a min/max par stock management system, ensuring strict compliance by all relevant parties.
  • Verify that all goods received and issued from the hotel’s main stores are accurately documented and accounted for.
  • Conduct daily and monthly food and beverage reconciliations using POS-generated sales analysis reports, explaining any discrepancies.
  • Perform monthly physical inventory counts of warehouse and operational stocks, ensuring strict adherence to hotel procedures, with final balances reconciled against the general ledger.
  • Prepare daily and monthly F&B cost reports, providing detailed analyses of exceptional variances, cost trends, slow-moving items, breakages, and losses.
  • Coordinate with the Chief Steward, F&B, and housekeeping teams to conduct biannual counts of operating equipment for accurate inventory tracking.

 

Qualifications

  • Minimum 5 years of experience, ideally in hotel accounting.
  • Rigorous, methodical, and recognized for your ability to work in a team and build trust.
  • Knowledge of Micros Symphony software is a plus.
