Holiday Inn Werribee is a hotel in Melbourne proudly showcasing the Holiday Inn open lobby concept. Situated in the heart of the Werribee city centre, the hotel will occupy the top 4 floors of the mixed use 12 storey premises and boasts sweeping views right across to the You Yangs and Wyndham Harbour. The hotel will offer 150 stylishly appointed guest rooms, gym, all day dining and modern conference and events spaces.
A Little Taste of Your Day to Day
- Shifts are on a rotational roster with early starts preparing hot and cold items for the buffet breakfast and eggs to guests liking, lunch and dinner cooking dishes from the Rosana Bistro and In Room Dining seasonal a la carte menu, conference and events with a capacity up to 200 pax
- Hands on role with demonstrated competency working in all kitchen sections Grill, Pans, Larder, Pass and Events
- Leading by example, supporting the Head Chef and Sous Chef with facilitating training and mentoring junior chefs and culinary students
- Producing high quality food and presentation with a la carte dishes and buffet style
- Following kitchen and hotel policies, procedures and brand standards
- Maintaining daily cleaning throughout the kitchen
- Following HAACP regulations and guidelines
- Preparing, portioning and garnishing of food and dishes are in line with methods of
- cooking and portion sizes per menu standards
- Practice correct storage and stock rotation ensuring minimum wastage
What We Need from You
- Certificate III Commercial Cookery or Culinary Hotel Management
- Valid Food Handlers Certificate
- Experience working in a hotel kitchen or similar culinary environment will be highly desirable
- Knowledge and experience with Modern Australian cuisine
- Effective verbal and written communication skills
- Show initiative and excellent problem solving skills
- Exceptional presentation and professional in appearance
- Adaptability to a busy and diverse kitchen environment
- Passionate about cooking, creative learning about different cuisines and cooking techniques
- Exceptional organisational skills with efficiency completing tasks prior to service periods
- Be able to work autonomously and collaborate with a positive "can do attitude" amongst the front and back of house culinary team
- It’s a physical role and you’ll be on your feet throughout your shift, so fitness is important
- Literacy skills - reading, writing and basic maths skills
- Full Valid Australian Working Rights
- Hospitality Industry General Award 2020 classification Cook Grade 5, Level 6, hourly rates
