Position Summary

The Pasta Prep Cook supports the Chef de Partie and culinary team with the preparation, production, and execution of fresh pasta and other food items according to established recipes and quality standards. This position plays an important role in maintaining an organized, clean, and efficient kitchen while ensuring all ingredients and pasta components are properly prepared and ready for service.

The ideal candidate is passionate about food, has strong attention to detail, works well in a fast-paced environment, and is eager to learn and develop their culinary skills.

Essential Responsibilities

  • Assist the Chef de Partie with daily kitchen preparation and production.
  • Prepare fresh pasta, pasta dough, sauces, fillings, and other components according to recipes and specifications.
  • Measure, portion, mix, roll, cut, shape, and store pasta as directed.
  • Prepare vegetables, proteins, herbs, sauces, and other ingredients needed for the pasta station and daily service.
  • Maintain proper organization and stocking of the assigned workstation.
  • Assist the Chef de Partie with service and ensure food is prepared and presented according to hotel and restaurant standards.
  • Follow recipes, portion controls, and established preparation procedures.
  • Properly label, date, store, and rotate food products according to food safety standards.
  • Maintain cleanliness and sanitation of workstations, equipment, utensils, and storage areas.
  • Monitor food quality and notify the Chef de Partie of any quality or inventory concerns.
  • Assist with receiving, storing, and organizing food products as needed.
  • Minimize food waste through proper preparation, storage, and portion control.
  • Work collaboratively with other culinary team members to ensure smooth kitchen operations.
  • Assist with opening, closing, and kitchen side-work duties.
  • Perform additional culinary duties as assigned by the Chef de Partie or Sous Chef.

Qualifications

  • Previous kitchen or food preparation experience preferred.
  • Previous experience making fresh pasta is a plus.
  • Culinary education or training is preferred but not required.
  • Basic knowledge of food preparation, sanitation, and kitchen safety.
  • Ability to follow recipes and instructions accurately.
  • Strong attention to detail and commitment to quality.
  • Ability to work efficiently in a fast-paced, high-volume environment.
  • Ability to communicate effectively and work as part of a team.
  • Willingness to learn new culinary techniques and expand knowledge of pasta production.

Physical Requirements

  • Ability to stand and walk for extended periods.
  • Ability to lift, carry, push, and pull food products, equipment, and supplies.
  • Ability to work in a hot, humid, and fast-paced kitchen environment.
  • Ability to bend, reach, stoop, and perform repetitive kitchen tasks.
  • Ability to safely handle knives, kitchen equipment, and hot surfaces.
