Executive Sous Chef
The Executive Sous Chef of Kimpton Tsim Sha Tsui Hong Kong acts as the number two kitchen leader in charge of the culinary operations and mainly oversees the development of the team, implementation of SOP's, and establishing standards of quality. This position is also involved in operations that can include Breakfast, In Room Dining Kitchen, Commissary, Team Canteen, Banquets and Events, and All Dinner Outlets. Works in collaboration with the Executive Chef in creating exciting, innovative, and delicious food.
A little taste of your day-to-day
Every day is different, but you’ll mostly be:
- Supervising the production of food at all stations, assisting the cooks, and expediting food when needed
- Leading all aspects of the kitchen in the absence of the Executive Chef, tackling any issues that arise and seize control of any problematic situations, assisting in the preparation and design of menu items
- Assisting with any required paperwork, including forms, reports, and schedules in an organized and timely manner
- Interviewing and hiring employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and solving problems
- Identifying developable staff, and providing necessary training as positions open
- Assisting in filling open positions with qualified internal or external applicants
- Ordering, stocking and ensuring that all products are received in the correct unit count and condition
- Maintaining budgeted labour costs and assisting in controlling overtime, tracking food costs as requested
- Ensuring that food is produced on a timely basis
- Participating in service education through daily line-ups, quarterly menu meetings, and new staff training programs
- Assisting the restaurant in meeting the financial targets while achieving the food quality service objectives
- Maintaining a high level of cleanliness in the kitchen facilities by supervising the daily cleaning of the pantry, cooking line, prep kitchen, dish area, and walk-in.
What we need from you
- A minimum of 8 years’ experience as a chef, with at least 2 years at Sous Chef in a high-volume, fully service restaurant. Solid experience in managing banqueting is preferred
- A bachelor’s degree or certificate in culinary arts or hospitality management
- Holder of local Hygiene Manager Certificate and/or Food Safety and Hygiene certification
- Passionate about various cooking methods, ingredients, equipment, and the industry’s standard practices and trends
- Innovative, good time management skills, ability to remain calm under pressure and adapt to a dynamic hospitality environment
- Excellent leadership, training and coaching skills
- Knowledgeable in Microsoft Office Word, Excel, PowerPoint, restaurant POS system, inventory management and/or procurement software experience and timekeeping software, business & accounting software
- Good command of both English and Chinese (Cantonese and Mandarin) is a must, speaking and writing
