 Key Responsibilities:

  • Assist the Chief Steward in managing the daily operations of the Stewarding Department.

  • Supervise and coordinate the stewarding team to ensure smooth and efficient operations.

  • Ensure all kitchens, back-of-house areas, equipment, utensils, and operating areas are maintained to the required cleanliness and hygiene standards.

  • Monitor the cleaning and sanitization of kitchen equipment, utensils, crockery, cutlery, and other operating items.

  • Ensure proper handling, storage, and maintenance of chemicals and cleaning equipment.

  • Conduct regular inspections of kitchens, stewarding areas, garbage rooms, and back-of-house facilities.

  • Ensure compliance with IHG/voco™ brand standards, HACCP, food safety, health, and hygiene requirements.

  • Assist with controlling stewarding supplies, chemicals, equipment, and operating inventory.

  • Monitor proper waste segregation and disposal procedures.

  • Prepare duty rosters and allocate daily tasks to stewarding colleagues when required.

  • Train, coach, and guide stewarding colleagues on cleaning procedures, hygiene standards, and safe working practices.

  • Ensure all colleagues follow appropriate health, safety, and personal hygiene standards.

  • Coordinate with Culinary, F&B, Engineering, and other departments to resolve operational issues.

  • Report equipment defects, maintenance requirements, and safety concerns to the Chief Steward.

  • Assist in maintaining accurate records, checklists, and cleaning schedules.

  • Support the Chief Steward during internal and external hygiene, food safety, and brand-standard inspections.

  • Ensure adequate stewarding coverage during busy operations, events, and banquets.

  • Promote teamwork, discipline, and a positive working environment within the department.

Key Requirements

  • Previous experience as an Assistant Chief Steward, Stewarding Supervisor, or Senior Steward in a 4- or 5-star hotel.

  • Minimum 2–3 years of relevant stewarding experience, preferably within an international hotel environment.

  • Good knowledge of food safety, hygiene, HACCP, cleaning procedures, and chemical handling.

  • Strong understanding of kitchen and back-of-house cleanliness standards.

  • Experience supervising and developing a diverse team.

  • Good communication and interpersonal skills.

  • Strong organizational and problem-solving abilities.

  • Ability to work under pressure and manage priorities during busy operations.

  • Good knowledge of stewarding equipment, chemicals, and cleaning methods.

  • Familiarity with IHG brand standards is an advantage.

  • Food Safety / HACCP certification will be an advantage.

  • Ability to work flexible shifts, including weekends and public holidays.
