About Us

Escape the Ordinary is an innovative Restaurant and Bars partnership between culinary visionary Matthew Butcher, Salter Brothers & IHG. Our 2 venues, Estate and Shutters are based at Crowne Plaza Coogee Beach and are the hottest new venues in Sydney! We are on the hunt for a savvy, experienced Sous Chef to take ownership of the Shutters culinary team. Shutters- our award winning design leans on a vibrant Miami feel letting the sun and salty air in offering a light filled space to enjoy with the family. The perfect place to relax and look out onto Coogee Beach, our three separate offerings within Shutters – the Restaurant, the Bar and the Lounge makes this all-day venue a place where you can enjoy your next dining experience or event.


Your day to day

We’re looking for a passionate and skilled Sous Chef to partner with our Venue General Manager and Head Chef to take the lead for day to day kitchen operations across Shutters. As Sous Chef, you’ll manage busy kitchen operations, day to day menu implementation, food safety training and audits, administration and kitchen financials with an emphasis on maintaining hygienic standards and practices, employee engagement, and overseeing the preparation and presentation of a consistent food product which exceeds customer's expectations. On the daily you'll provide direction to the team on shift, and encourage their learning and growth by coaching and inspiring them with your passion for food, service and teamwork. You'll be diligent and adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures.


What we need from you

The successful candidate will have a minimum of 5 years’ experience as a Chef and at least 2 years supervising or leading a culinary brigade. Experience working with a la carte and buffet styles is essential and event experience would be an advantage. You'll have experience with stock control and inventory management as well as being committed to training, development and creating a positive culture A flair for producing innovative food concepts is a must in addition to an ability to work under pressure whilst being organised, optimistic and effective in fast-paced situations You'll bring excellent communication skills and lead from the front with your team.
