“We have a regular Iranian guest who is always travelling on business, sometimes for long stretches. Whenever he’s in town, he stays with us. One day, on his way to dinner, this guest mentioned to a colleague of mine that he’d already eaten a fair share of our hotel’s Western dishes during what was a particularly long stay this time. That’s when I stepped in. As a chef, I think all food should be exciting and I decided to give this guest the best of both worlds.

"The next day, I reserved a table in a quiet, relaxing area of our Senses restaurant and prepared a mixture of our local specialities, alongside several of our guest’s favourite dishes from Iran. When he walked in and saw what was waiting for him on the dining table, his reaction was priceless. He was really moved. I’ll always remember him saying how hard it is not to miss home when you’re travelling so much for work. He said what we’d done had provided the warmth of home, right in our hotel. That was a pretty special feeling.”
