As the Restaurant Chef de Cuisine for our prestigious fine dining restaurant within our luxurious 5-star hotel in Los Angeles, you will be entrusted with the responsibility of leading our culinary team to deliver extraordinary dining experiences. Your exceptional culinary skills, leadership, and management expertise will contribute to maintaining our restaurant's reputation for excellence.

A little bit about your day:

Reporting to the Executive Chef, every day is different, but your essential functions will include the following:

•   Collaborate closely with the Executive Chef to conceptualize, design, and execute a fine dining menu that reflects innovation, flavor, and exquisite presentation.
•   Lead the culinary team by example, overseeing all aspects of food preparation, cooking, and plating to ensure the highest culinary standards are maintained.
•   Expertly manage high-volume operations, ensuring that the kitchen operates efficiently without compromising on food quality or presentation.
•   Maintain precise time management to guarantee the timely preparation and service of all orders.
•   Inspire and mentor a diverse kitchen brigade, fostering a culture of teamwork, excellence, and continuous improvement.
•   Delegate tasks and responsibilities effectively, ensuring the kitchen runs seamlessly even during peak hours.
•   Drive the development and refinement of the menu, introducing creative, seasonal offerings that embody our restaurant's commitment to fine dining.
•   Stay at the forefront of culinary trends, techniques, and ingredients, inspiring the team with innovative ideas.
•   Uphold strict quality control standards for every dish that leaves the kitchen, ensuring they meet or exceed the expectations of our sophisticated clientele.
•   Conduct regular inspections to maintain consistency and excellence in all culinary offerings.
•   Play a key role in inventory management, ensuring essential ingredients are consistently stocked for service.
•   Collaborate with the procurement team to place orders that meet our restaurant's uncompromising standards for quality.
•   Provide ongoing training and professional development for kitchen staff, promoting culinary growth and maintaining a highly skilled workforce.
•   Enforce strict food safety and sanitation practices, adhering to health regulations and ensuring guest safety.


What we need from you:

•   Culinary degree or equivalent culinary certification preferred.
•   Extensive experience as a Chef de Cuisine or a similar leadership role in high-volume, fine dining establishments.
•   Exceptional leadership skills with the ability to manage a large kitchen team in a high-pressure environment.
•   Creative mindset with the ability to conceptualize, execute, and adapt sophisticated culinary concepts.
•   Comprehensive knowledge of fine dining culinary techniques, presentation, and plating.
•   Strong organizational, communication, and problem-solving skills.
•   Proficiency in inventory management and ordering processes.

What you can expect from us: 

The annual pay range for this role is $125,000.00 to $115,000.00. This range is only applicable for jobs to be performed at Regent Santa Monica Beach. This is the lowest to highest pay scale we in good faith believe we would pay for this role at the time of this posting. We may ultimately pay more or less than the posted range, and the range may be modified in the future. A team member’s pay position within the pay range will be based on several factors including, but limited to, relevant education, qualifications, certifications, experience, skills, seniority, geographic location, performance, shift, travel requirements, sales or revenue-based metrics, and business or organizational needs.


Note: No amount of pay is considered to be wages or compensation until such amount is earned, vested, and determinable. The amount and availability of any bonus, commission, or any other form of compensation that are allocable to a particular employee remains in the Company's sole discretion unless and until paid and may be modified at the Company’s sole discretion, consistent with the law.
