  • Possesses working knowledge of wine, cocktail mixing and all beverages.


  • May be assigned to perform duties of Room Service or Banquet when needed.


  • May be assigned to perform duties in other F&B outlets when needed


  • Completes daily beverage inventory journal, bar opening and closing stock and initiates requisitions in accordance to the established par stock.


  • Take orders and promote beverage specials in accordance to the established standards.


  • Checks guest satisfaction and attend to guests’ request or inquiries regarding beverage and services at the public bar.


  • Presents guests check and follow all billing procedures.


  • Cleans and polishes Glassware, China ware, hollowware and flatware.


  • Maintains cleanliness and mise-en-place level at bar counter, bar cabinets, shelves, floor and service pantry for smooth operation.


  • Obtains beverage requisitions and bar supplies from storeroom.


  • Follows correct sequence of service and standard of sanitation and hygiene.


  • Sets up bar equipment and prepares mise-en-place in accordance with bar policy.


  • Cleans the bar counter inside out during service time and at closing.


  • Disposes the garbage bags and clears empty bottles and beer barrels at the designated area.


  • Checks bars for necessary repairs and follow up with appropriate work order to Engineering.


  • Controls the requisition of beverages and all supplies to maintain par stock for smooth operation.


  • Executes the general responsibility necessary to minimize costs in operating the restaurant and achieving sales goals.


  • Monitors standard recipes for all beverages.


  • Participates in the monthly beverage physical inventory and monitors the activities.


  • Ensure all necessary arrangements and preparations are made for normal and special events; coordinates activities with Banquet, Engineering and other departments.


  • Conducts/Participates in daily briefings and monthly communication meetings to discuss various aspects of beverage service and preparation.


  • Checks all bars for repair of furniture and fixtures; coordinates with Engineering.


  • Attends to guest complaints, requests or inquiries regarding beverage and services


  • Maintains proper records of Sales, guest complaints, solutions and all concerns pertaining to personnel or equipment in appropriate logbooks, discusses the same with Asst. Beverage Manager.

  • Trains personnel according to established procedures; conducts orientation of all new employees and ongoing training of all staff.


  • AIn the absence of a Manager, conducts shift briefings to ensure hotel activities and operational requirements are known


  • Endeavour to resolve all complaints during shift and logs all complaints in log book for further follow up


  • Oversee the Implementation of standards as detailed in the departmental standards and procedures manual


  • Enforce correct bill paying procedures


  • Conduct effective shift briefings ensuring all staff are aware of VIPs, special occasions, daily specials; emphasis on up-selling certain products; etc


  • Supervise cash handling and banking procedures


  • Monitor standards of guest facilities and services


  • Assist with menu and wine list creation


  • Manage special amenities and special events


  • Actively pursue cost saving measures


  • Analyze statistics and change your operations to reflect customer preferences


  • Mix your own shift hours to ensure you know what is happening in your department at all times (ie nights, days, week-ends and during the week, break, lunch and evening shifts)


  • Make conversation to guests during their order and find out their likes and dislikes as well as building rapport


  • Other reasonable Ad hoc tasks assigned by supervisor
