Key Job Responsibilities 

  • Supervising, co-ordinating and participating in the preparation of all Stocks, Soups, Sauces, Daily Special, Theme Night preparation, Banquets, Roasts, Cooking Vegetable and any cooked food items for all Kitchen Outlets.
  • Observes and tastes food when being cooked, ensures that food is prepared according to recipes in classical and culinary manner.
  • Supplying all Kitchen Outlets according to Inter-Kitchen requisitions.
  • Checks the Daily Menu, Function Sheets, Par Stock, to determine the type and quality of food tiems to be prepared.
  • Prepares the requisition for groceries and food items based on par stock.
  • Prepares time schedule of his section and submit to Sous Chef for approval.
  • Ensures cleanliness of all utensils, cooking equipment, working tables, cold fridges and Kitchen area.
  • Ensures that Hotel’s Cost Control policies and procedures are followed.
  • Other duties and responsibilities which might be assigned from time to time by the Exec. Chef.
  • To consistently provide and maintain the highest standard of guest care and service.
  • To ensure that you and all reporting staff maintain a high standard of personal hygiene and grooming at all times.
  • To ensure that designated uniforms are worn well pressed and in a good state of repair and to ensure that name badges are worn at all times.
  • To assist your Outlet Manager in maintaining and updating the depatmental      Service Standards Manual.
  • To ensure that you and all reporting staff demonstrate the required Service Standards.
  • To assist your Outlet Manager in regularly monitoring staff performance against agreed criteria.
  • To have a good knowledge of all hotel facilities and be able to answer guest questions in a quick, polite and helpful manner.
  • To handle any guest complaints or problems promptly and to ensure that all resolved/unresolved incidents are reported to your Outlet Manager.
  • To ensure company, hotel and statutory rules, regulations and policies are adhered to at all times.
  • To act on your responsibilities for Health and Safety at work.
  • To demonstrate a working knowledge of fire prevention and to ensure that staff follow the hotel evacuation procedures on hearing the alarm.
  • To be security conscious with respect to guest, staff and hotel property/welfare and to report suspicious circumstances to your Outlet Manager.
  • To ensure the departmental area is maintained in a safe, hygienic and presentable state and to report any damage to furniture, fittings and equipment        to your Outlet Manager.
  • To communicate positively with staff, colleagues and your Outlet Manager to    ensure effective teamwork and high morale.
  • To attend meetings and training sessions/courses that may be beneficial to you  and your department.
  • To assist your Outlet Manager with the Orientation of new members of staff.
  • To assist your Head of Department in rostering staff effectively.

Self Management 

  1. Gain understanding of the departmental goals and financial targets. 
  2. Comply with hotel rules and regulations and provisions contained in the employment handbook. 
  3. Comply with company grooming and uniform standards. 
  4. Comply with timekeeping and attendance policies. 
  5. Actively participate in training and development programs and maximise opportunities for self development. 

Customer Service 

  1. Demonstrate service attributes in accordance with industry expectations and company standards to include:- 
  2. Being attentive to guests 
  3. Accurately and promptly fulfilling guest requests 
  4. Understand and anticipate guest needs 
  5. Maintain a high level of knowledge which will enhance the guest experience 
  6. Demonstrate a service attitude that exceeds expectations 
  7. Take appropriate action to resolve guest complaints 
  8. Appreciate the dynamic nature of the hotel industry and extend these service attributes to all internal customers. 
  9. Be able to promote the hotel (and InterContinental Hotels Group generally) products and services. 
  10. Maintain a high level of product and service knowledge about all InterContinental Hotels Group hotels in your region. 
  11. Ensure known repeat guests, priority members and other VIP's receive special attention. 

Health Safety & Security 

  1. Operate equipment using procedure learnt during training to company standards. 
  2. Demonstrate an understanding and an awareness of all policies and procedures relating to Health, Hygiene and Fire Life Safety. 
  3. Familiarise yourself with emergency and evacuation procedures. 
  4. Ensure all security incidents, accidents and near misses are always logged in a timely manner and brought to the attention of your line manager. 
  5. Establish and maintain strict security procedures within your department, especially areas relating to key control, bedroom access and vigilance of the team.
