Our experienced team of hotel chefs have been cooking up a storm all over the globe for many years. We’ve been scoping out the cuisine of some of the countries we’re lucky enough to exist in, to give you an idea of what to expect when you dine with us, no matter where about in the globe you are…


Calling all spice lovers! Mexico is the undeniable home of the jalapeno and all things hot. But you can expect a lot more than just fajitas when holidaying in this Hispanic paradise. For breakfast, why not grab yourself some Chilaquiles – a traditional tortilla dish with a difference.

Authentic Mexican cuisine is much more than the ‘typical’ spicy grub we’re used to seeing at home. Real Mexican dishes include the likes of shredded beef with lime and avocado - or Pozole, a traditional stew made with chicken and vegetables. As for dessert, tuck into an adventurous helping of pastel de tres leches, or three milk cake! There’s certainly a lot more to Mexico’s food than meets the eye…




Japan is known for its stunning natural landscape and strong cultural identity – it’s definitely a once-in-a-lifetime holiday destination. This unique East Asian island is also home to some deliciously fresh cuisine. Of course, we all associate Japan with amazing sushi. Sushi has recently made a name for itself as an increasingly trendy snack and can be found in abundance in Japan.

If you feel like branching out though, why not try a bowl of Ramen – a new favourite with tourists from all over. Or for the more adventurous, you may even be tempted by some Unagi (that’s river grilled Eel to us!).  It’s fair to say that Japan is a world of weird and wonderful cuisine that simply demands exploration.




The food of Thailand needs little introduction. Thai restaurants have found their way into most cosmopolitan cities and are now firm favourites amongst many dinners. Thailand’s wealth of exotic flavours and fragrances make it among the most coveted of international cuisines.

When holidaying with IHG in Thailand, expect noodle favourites such as Pad Thai, as well as Khao Pad (fried rice) or even the likes of Yam Nua (a plate of spicy beef salad).  Many traditional Thai classics take started off as street food dishes - so be sure to expect a real taste of Thailand when you get here… 




Steeped in history and surrounded by by the Mediterranean Sea, Greece has given the world some of its finest cooking ingredients. Whilst staying with us in Greece we’ll want you to sample them all, washed down of course with a good old glass of ouzo… A great starting point is Moussaka – an absolute Greek classic that’s always in demand.

Expect to be offered an array of traditional dips, such as Taramasalata – as well as olive oil and bread in abundance. Greece is also famed for its fresh cheeses such as feta, which comprise the basis of many traditional dishes. Get discovering with your taste buds! 




Planning a romantic getaway to France?  If there’s one thing the French love it’s their coveted food –so make sure you indulge in some of the country’s most delicious cuisine when staying in one of our French hotels. It’s not all frogs’ legs and snails though!

Some of the more traditional (and less adventurous) dishes you can expect to find include the classic croque-monsieur (the French love their cheeses!) - as well as other traditional go-to dishes such as duck confit, jambon-beurre and not forgetting the humble French baguette! There truly are delicious delicacies aplenty in this stunning country, so get tasting.
